These Very Vanilla Cranilla Cookies are so good that I always make at least a triple batch. I can easily eat an entire batch as soon they come out of the oven! This is a delicious recipe that makes up nicely whether you are using all-purpose wheat flour, or any other kind of gluten-free flour. They are also delicious with alternate sugars. Just make sure you don't skimp on the vanilla!

Equipment

  • 1 mixer

Ingredients
  

  • 1 cup butter
  • 1 cup sugar-any kind of granular-white, monk fruit, or coconut sugar. My favorite combination is 3/4 cup coconut sugar and 1/4 cup monk fruit.
  • 2 TBS vanilla extract
  • 1 tsp cranberry extract Watkins opt.
  • 2 cups flour-any kind of flour
  • 1 tsp baking powder
  • 1 tsp salt I like Himalayan pink salt for desserts.
  • 2 cups coarsely chopped cranberries: whole fresh or dried
  • 1 cup chopped nuts
  • 1 egg
  • 1 cup vanilla chips

Instructions
 

  • Mix all ingredients together.
  • Drop by spoonful on a greased cookie sheet, or a Silpat sheet.
  • Bake at 350* about 13 min.
