BEE BALM POUND CAKE

I originally got this recipe out of an edible flower cookbook. This recipe is a great base for whatever flavor you desire. Most of the time I make orange poppyseed pound cake
Cook Time 1 hour 20 minutes

Ingredients
  

  • 1 cup butter
  • 2 cup granulated sugar
  • 2 1/4 cup all-purpose flour
  • 6 eggs
  • juice of 1 lemon
  • ½ cup bee balm flowers coarsely chopped
  • 1/8 tsp. salt

Instructions
 

  • Preheat oven to 325*F.
  • Cream together butter and sugar until mixture is light and fluffy.
    2 cup granulated sugar, 1 cup butter
  • In a separate bowl, sift and then measure flour.
    2 1/4 cup all-purpose flour
  • Alternate adding flour and eggs (one at a time) to the creamed sugar, beating continually.
    6 eggs
  • Add lemon juice, vanilla, bee balm flowers and salt. Mix for 1 minute.

  • Pour batter into a buttered and floured tube pan and bake for about 1 hour 20 minutes, or until toothpick inserted in the center comes out clean.
  • Take cake out of the oven and put on a rack to cool for 10 min.
  • Remove cake form pan and allow to cool completely on rack.

Notes

You can be as creative as you want with this recipe. I have a friend who shares her Arizona oranges with me so I replace the lemon juice with orange juice and add a little orange extract for more orange flavor. 
Exchange the bee balm flowers with lavender, chopped nuts, seeds, or chocolate pieces.

Grandmama’s Pound Cake – Small

This is a good old fashioned pound cake. Traditionally pound cake is a pound each of butter, sugar, flour and eggs. Grandmama's pound cake recipe has always been a sure crowd pleaser!

Ingredients
  

  • 2 sticks oleo margarine
  • 1 1/2 cups sugar
  • 5 eggs
  • 2 cups flour
  • 1/2 tsp. almond extract
  • 1/2 tsp. vanilla extract

Instructions
 

  • Preheat oven 325*
  • Cream butter and sugar
    2 sticks oleo margarine, 1 1/2 cups sugar
  • Add eggs one at a time. Beat well after each addition.
    5 eggs
  • Add flour a little at a time, beating after each addition.
    2 cups flour
  • Add almond and vanilla extracts.
    1/2 tsp. almond extract, 1/2 tsp. vanilla extract
  • Bake 55 minutes, or until toothpick comes out clean.

    8 eggs

  • Bake 55 minutes, or until toothpick comes out clean.
